Sophie Jacobine de Neergaard
<p style="font-weight: 400">Sophie Jacobine de Neergaard (1810-1857) was born on May 16, 1810 at Høstemark. She was the daughter of landowner Johan Michael de Neergaard, who owned Høstemark, Egense Klostre, Store Restrup and Vivebrogaard. Sophie married Anders Didrich Dinesen (1798-1840) on April 4, 1829, who took over Kragerup Gods after the death of his father Jens Kraft Dinesen in 1827. They had a total of three children together. </p>
<p style="font-weight: 400">When Sophie’s husband died, their eldest son, Jens Kraft Jacob Sophus Dinesen (1830-1910), was only 10 years old, which meant he wasn’t old enough to take over Kragerup Gods. Sophie therefore took over the administration of the estate and was very good at it. After her husband’s death, she continued the ongoing construction of the estate’s two current wings, which were completed in 1843. She also relieved the court and built the settlement farm Rugskov. </p>
<p style="font-weight: 400">Sophie died in Copenhagen on November 23, 1857 at the age of 47.</p>
<p>The 8th generation of the Dinesen family at Kragerup Gods tells about the resourceful woman:</p>
<p style="font-weight: 400"><em>“Sophie Jacobine Dinesen was an enterprising woman who wrote down her best recipes in ink in 1829. She lived in a different time with an open fireplace and copper clothes, but managed to make the most beautiful recipes from rye bread ice cream to crayfish pudding and chicken soufflé. We found the recipes in the archive in 2018, but they were not possible to decipher as there were measurements like pot and stake.”</em></p>
<p style="font-weight: 400"><em>“After an exciting collaboration with chefs, food historians, Museum Vestsjælland, Aarhus University and Slagelse Erhvervscenter, we are able to present the book “Gastronomiske madoplevelser anno 1829″. The book contains wonderful stories by me, 8th generation estate owner Birgitte Dinesen, my mother, our former head chef Frank Andersen and Estate Manager Olav Ditlevsen. Sophie’s fine recipes can be purchased at the reception at Kragerup Gods and at the museum in Sorø.” </em></p>
