Our skilled chefs have put together a carefully selected menu with game and ingredients from the estate’s own fields and forests. All dishes are prepared with respect for the classic flavors, but with a contemporary and modern twist. For this year’s game menu, we have once again visited the wine cellar and selected particularly good wines, which are carefully matched to the menu and can be purchased with the dinner.

Starter
Game tartare with pickled kohlrabi, the first wild garlic, roasted buckwheat and herbs from the estate garden.
Served with sourdough bread and butter.
Main course
Breast of mallard with confit parsnip, sea buckthorn, crispy cabbage and sauce with port wine, mustard seeds & duck hearts.
Served with buttery mashed potatoes with “burning love” and cress.
Dessert
Fresh apple compote with browned butter ice cream, apple, crispy sablé and caramel sauce with roasted hazelnuts and sea salt.
