Starter: Poached ling with salt-baked beetroot, dill mayonnaise, apples from the estate garden, pungent herbs and beetroot and apple sauce
Entree: Fried turbot with cognac and lobster sauce, sautéed tarragon and winter cabbage and roasted fennel cream
Main course: Teres major cut of beef with glazed parsley roots, parsley root puree, green pepper sauce and oven baked small potatoes with browned butter and chopped herbs
Dessert: Sea buckthorn sorbet with creme fraiche mousse, fried reindeer lichen, cold blueberry sauce with lemon thyme
